Taittinger Les Folies de la Marquetterie Brut NV is an exclusive, terroir-driven champagne made from a blend of 55% Pinot Noir and 45% Chardonnay grown exclusively in the single vineyard "Les Folies" near Château de la Marquetterie in Pierry, Champagne. The grapes are carefully harvested through green harvesting to ensure optimum aromatic maturity and sweetness, with only the first pressing juice (cuvée) used. The winemaking involves small-batch vinification with some lots aged in old oak casks and a slow maturation on lees for five years to achieve complexity and harmony.
